The Texas A&M University System Board of Regents has approved a $114.6 million Meat Science and Technology Center at Texas A&M–RELLIS, expected to break ground in early 2026. The 75,000-square-foot facility will feature advanced laboratories, classrooms, and a full meat-processing floor for beef, poultry, swine, sheep, and goats, providing extensive hands-on training. Designed to elevate Texas A&M’s meat and poultry science programs, the center will also include outdoor animal-handling areas, an auditorium, observation spaces, and a retail outlet selling products developed onsite.
The facility will support research, teaching, and industry outreach, hosting programs such as Barbecue Summer CampCamp BrisketBeef 101, and youth events through Texas 4-H and FFA. University leaders say the center will strengthen Texas A&M’s global leadership in meat research, food safety, processing, and nutrition, while also advancing key state agricultural sectors—particularly the poultry industry, one of Texas’ top commodity areas.
