The Texas A&M University System Board of Regents has approved a $114.6 million Meat Science and Technology Center at Texas A&M–RELLIS, expected to break ground in early 2026. The 75,000-square-foot facility will feature advanced laboratories, classrooms, and a full meat-processing floor for beef, poultry, swine, sheep, and goats, providing extensive hands-on training. Designed to elevate Texas A&M’s meat and poultry science programs, the center will also include outdoor animal-handling areas, an auditorium, observation spaces, and a retail outlet selling products developed onsite.
The facility will support research, teaching, and industry outreach, hosting programs such as Barbecue Summer Camp, Camp Brisket, Beef 101, and youth events through Texas 4-H and FFA. University leaders say the center will strengthen Texas A&M’s global leadership in meat research, food safety, processing, and nutrition, while also advancing key state agricultural sectors—particularly the poultry industry, one of Texas’ top commodity areas.
